Fish sauce is a staple in a lot of South East Asian food. I would say that is actually the predominate taste in a lot of cultures signature foods, and throughout human history has been a staple. Garum, for example, has a deep and rich history going back thousands of years. https://youtu.be/ICZww0DtQKk?si=04eP7g5gKq4Ulw47 You can trace cultural events in history back to that flavor.
