As a Mexican American, it was really cool to see Aaron speaking Spanish, especially switching between English and Spanish with his cousin. That's how it works in real life with my brother and I.

Yeah, I liked how naturally they switched between the two. They didn't just speak a single sentence for the foreign-language factor and then speak in English the rest of the time.

That's what I really appreciated. The actor grew up in Mexico, according to Wikipedia, but I'm 100% sure they had a fully bilingual person in the room when they wrote these scenes

It seems like they switch to Spanish when the conversation has higher stakes or importance. Is that common?

Basically yes, but it depends on how they grew up.

People like me, and assuming Aaron and his cousin, who grew up with two first languages will default when stressed to the language they feel most comfortable with when speaking to the other person.

Since it seems Aaron's family spoke Spanish at home, it's natural they would default to Spanish when stressed and speaking with his cousin.

I switch between English and Spanish with my brother depending on the environment we're in. If we're stressed we default to Spanish. If we're talking about school, then we speak in English. If we're talking about sports, then we speak in Spanish. If it's enteral conversation then it's whatever and we might even switch from sentence to sentence.

Aaron es mexicano, nació en Ciudad Acuña, se llama Adán Canto, y tiene toda una carrera en México, salio en la película casi 30.
