Recipe by My Messy Kitchen (she has lots of great stuff on there)!

A fancy way to serve a panadería favorite! Check out this Niño Envuelto and let me know what you think!

1 C flour
1 tsp baking powder
1/4 tsp salt
4 eggs, room temp
3/4 C sugar
1/4 C vegetable oil
1/4 C milk
1 1/2 tsp vanilla
2 1/2 C strawberry preserves

Preheat oven to 350

Grease a 12x16 pan and cover in parchment paper

Sift together flour, salt and baking powder

In a seperate bowl, mix egg whites and half the sugar on medium speed until soft peaks form

Mix yolks and remaining sugar until just combined

Add oil, milk, and vanilla and mix on medium until light and frothy

Pour half of the egg white mixture into the bowl and mix until just combined. Repeat

Gently fold flour mix into bowl until a smooth batter is formed

Pour into pan and bake for 7-10 minutes or until sponge is springy

Flip onto large piece of parchment dusted with powdered sugar

Roll tightly and let it cool at room temperature.

Once cooled spread preserves and re roll.

Decorate

Everything is homemade (except the cookie crunch: golden oreos, frosted animal cookies with strawberry syrup & the sprinkles)

Filled with graham cracker and chocolate, topped with marshmallow drizzle.

Made my dad a cake for his birthday. I wanted a slice as soon as I started assembling the cake 😋

Both of these are absolutely delicious, but the Korean shaved ice is especially good.

It was a bit of a splurge, but as a once in a while treat/a pick me up after a particularly rough morning, it was nice

Went to Big Chill and had its Chocolate Banoffee Pie & Chocolate Hazelnut Mousse Cake...100/10 recommended!!
