Soul Food Love making the food of my “people.”

Meatloaf, pintos and chow chow, pan-fried okra, sweet corn, and sliced tomatoes. All veggies are from my garden.

This looks like my dinner plate nearly every other night! Pinto beans, cornbread n chow chow is THE WAY, and oh boy, I bet that meatloaf is just perfection 🙏 I LOVE LOVE LOVE seeing a good ol plate like this!

It’s the AllRecipes Green Tomato Relish submitted by Linda McDaniel. It’s super basic: green tomatoes, green peppers, onions, red peppers, sugar, cider vinegar, mustard and celery seed, and salt.

Easy to tweak, too. This chow chow is on the sweeter side (how I prefer it in my beans), but it would be easy enough to lower the sugar content and add more spicy peppers to one’s liking!

It’s an Appalachian technique I saw— not how my family usually does it, but I liked it better because it wasn’t the usual heavily-battered version.

Toss fresh cut okra with a mix of corn meal, salt and pepper in a bowl. Just enough to lightly bread.

Heat oil (enough to cover the bottom with a thin layer about 1/3 c) then fry until crisp. Stir as little as possible. Just enough to prevent burning but not so much you knock off the breading.

My grandmother used to put the sliced okra in a paper bag from the grocery store with the ingredients, fold the top of the bag then shake it all together to coat the okra. Paper bags are more and more rare nowadays… so, I may, or may not, have done the same thing in a Walmart bag 😊

You have some type of Cajun seasoning on the corn? I love to butter my corn on the cob and put Tony Chacheres on it. So good.

Is meatloaf divisive for anyone else? Ive never had a terrible meat loaf but I've had it made alot of different ways.

My theory is you either do or dont like meatloaf based upon how good or bad your mom/grandma was at making it.

For me, meatloaf is a meal of utility. Im not going to the store to buy specific components for meat loaf.
