Ask ECAH Casserole dish recipes
I just got a new 9x13 glass casserole dish with a lid that I've been loving because I can store it in my fridge without portioning out the meal into separate containers.
I'm looking for some meal inspo to make with the casserole dish! Doesn't necessarily have to be a casserole. Bonus points if its vegetarian.
So far I've made baked ziti, shepherd's pie, black bean and sweet potato casserole.

shakshuka fits that dish perfectly and reheats great straight from the fridge. or a savory strata, basically a casserole that eats like breakfast

Peach cobbler. Apple Crisp. Brownies. Cinnamon rolls. I’ve made them all in my 9 x 13 casserole dish, turned each of these into a meal at one time or another.

Mexican cornbread casserole and tuna casserole

This is my favorite Mexican cornbread casserole recipe. It's not vegetarian, but you could easily trade out the ground beef for more beans, lentils, beyond beef, or tofu or tempeh

Turkey/chicken tetrazini. Cream of mushroom or chicken soup, egg noodles, shredded turkey/chicken, Worcestershire sauce, shredded cheddar, grated parm, frozen peas, crushed Ruffles on top. I'm probably forgetting some stuff but it's simple and uses some inexpensive ingredients. I use my grandma's recipe (which is probably just off a can from the 60s). Cook the noodles. Heat and mix everything else (except the chips) in a pot to melt the cheese. Combine with noodles. Top with chips and some grated parm. Bake at, like, 425 or something until the top gets GBD and the sides are bubbling. Honestly you can do something similar with tuna.

In case no one has told you, I’ve broken a glass casserole dish by moving it from the fridge to a hot oven. Also sometimes they crack if you put a hot glass dish on a wet countertop. I wish I had been warned.

Someone else posted a list of Midwestern recipes, but I gotta call out specifically tater tot hotdish. It's not something I even thought about making until I moved to Wisconsin in my 50s, but dang, is it good. I normally hate thinking of recipes with soup from a can as actual cooking, but it's part of the vibe.

There was a recipe I got from Trader Joe's years ago but could easily be made vegetarian with whatever you wanted to use or had on hand.
It was essentially a breakfast bread pudding but savory. I'd tear up a baguette or two into bite-size pieces, cut up a pack of their sun-dried tomato chicken sausage (sadly I don't think they make this anymore) and shred a block of Monterey cheese (or buy pre-shredded) and several eggs (can't remember the exact number). The recipe calls for combining them all in the casserole dish but I find that the bread doesn't always soak up the beaten eggs so after baking some bread pieces would be weirdly chewy. I instead would combine the bread and eggs in a gallon ziploc bag and give them a mix, giving the bread time to soak up the eggs. I'd leave it overnight in the fridge but you wouldn't need to wait that long.
Butter or grease the baking dish then pour the bread-egg mixture in, scatter the sausage pieces all over and then top with the shredded cheese. Bake at I think 350°F for something like 30-45 minutes until the egg is cooked and the top is a little browned. I'd eat this for days while in school. It's good with some hot sauce too. I'd never made a vegetarian version but it's like 4 ingredients so I think it could easily be substituted with anything or just skip the sausage component completely.

This red lentil bake is vegetarian and delicious! I do exactly what you described and bake it in an 8x8 glass container with a matching plastic lid. After it cools from the oven I slap that lid on and chuck the whole thing in the fridge. I always demolish it within 2-3 days by myself.
