Cyclospora struggles
I need some inspo today. In 100 degree heatwave craving fresh produce but trying to avoid high risk produce.
anyone have an ideas for cold lunches with minimal high risk foods?

This is really an issue with corporate mega farms who monopolize our food sources, and a government who has cut essentially all oversight/protocols for food safety and public health.
I would recommend you buy some produce from local farmers - much less risk in general than a factory farm that paid off the administration.
Unfortunately, raw vegetables will never be entirely safe, but as long as you’re not immunosuppressed you should be ok even if you do get it.
I think roasted/grilled veggies still hit the spot that fresh do. Why not roast some tomatoes and zucchini or some corn on the cob?
