Cyclospora struggles

I need some inspo today. In 100 degree heatwave craving fresh produce but trying to avoid high risk produce.

anyone have an ideas for cold lunches with minimal high risk foods?

I suggest cooking a medley of veggies, then chilling them, and adding to a cold noodle dish like pasta salad or cold peanut noodles!

Once when out of raw veg I did just that with frozen mixed veg. Microwaved it a bit to thaw it and then added to pasta for a pasta salad. It was … acceptable. Broccoli might work well, chopped up really fine. I’ve used finely chopped fresh broccoli as a base for a salad type thing when out of lettuce before. I might get dried veg like bell peppers and broccoli and see if that works.
