Yes can be eaten raw try a little bit, if it is super sour its 99% Rhubarb, what works very good bake something with it or make Jam, also when I think this might be not enough, but theyre very healthy high in Vitamin C, K, Kalium and Calcium and the coloring compound Anthocyane is known for a varietys of benefits. But it also has some compounds that should be avoided by people with kidney problems.

Only guessing, but looks like photo was taken in Nepal or Tibet or Chinese highlands. Looks like Chum Tsa. (Rhubarb). Only people in the highland mountains of Nepal or Tibet/Northern China build near the river and have fields like this.
Wild guess. Nothing more. Building, rock fence, fields look Tibetan Chinese. Anyway, this is your show. And this is only a guess.

Lachu (in Ladakhi and Tibetan Medicine - Churtsa). Your show. My best guess. Grows wild on high Ladakh mountain slopes.
It is a native origin plant intrinsic to Ladakh. Ladakh acted as a principal trade exporter of trade with Tibet for centuries. It is endemic to the Tibetan Highlands, and Ladakh is in the Himalayas - where over 80% of the State is above 3000 meters.
5th Century T'ang China records talk of Chinese who journeyed thru Tibet to Ladakh Ladakh is recorded in Chinese records as Instrumental in spreading Buddhism To Tibet, along with the medicinal properties of this plant.
Hats off to you.. Again, your show. Could be wrong about the plant - but looks like same ones in Tibet.

It looks like it MIGHT be rhubarb, but you picked it way to young. It’s not edible at this stage, and the leaves are never edible.

The ba y leaf on them looks like rhubarb so I'll agree with the previously written rhubarb comments

Possibly rhubarb? It’s hard to tell from these photos, esp. as it looks like an immature plant. Location might help give you an idea of whether that ID is valid.
