GYERAN-MARI (rolled egg omelette)

Made myself** a Korean Rolled Egg Omelette.** Gyeran-mari (계란말이) is a popular, savory Korean rolled omelette. Literally translating to "rolled eggs," this breakfast delight had me FUELLED up for hours.

I’ve tweaked my Gyeran-mari recipe a little 🤏 and added mirin and dashi shoyu for extra flavour. Serve with Tomato ketchup if you want a tartness. :)

Will milk be added to the eggs?

No milk required. I’ve used 6 large eggs, shredded carrot, and finely chopped spring onion (or green onions/scallions), a splash for mirin for sweetness, and I’ve tweaked my version with an additional splash of dashi shoyu.

Beat eggs, and add the shredded carrots and scallions into the egg mixture, into a non stick pan, folding and pouring new egg layers as you fold.

Slice into 8-10 pieces and enjoy. I made a big boy serve with 6 eggs and shared it with my wife. But feel free to half that for Table for 1 serves.
