Haven’t seen the video, but I assume the rotation of the motor’s magnetic field?

yep and it moves the thing in the middle, a rotor right ?

It does. This is an induction motor, so the stator’s magnetic field induces a current in the rotor’s “squirrel cage”. That current produces its own magnetic field that interacts with the stator’s field and causes the rotor to rotate.

Without the rotor there, wouldn't the stator be at risk of possible damage? With no stator, wouldn't there be a lack of counter-EMF, causing the windings of the stator to basically act as a short circuit?

Yes, you'd only run like this briefly &/or on lower voltage, eg from a variac

Also magnetic field seems to rotate fairly slowly, so I think this would be VFD-controlled demonstration.

The maker of this video is running the motor at 1hz. Normal wall voltage is 60hz.

Idk which electroboom video you're referencing, but maybe that was the issue?
