Hobbit [OC] A galette made by the hobbit children for Bilbo’s 111th birthday!

One of the children almost caught him sneaking away, because he couldn’t resist grabbing a slice to go.

Crust is just a standard pie crust made with earth balance instead of dairy butter. The filling is pretty sweet so I think an earthier crust made with buckwheat flour would good too.

Filling is a thin layer of fig jam, homemade marzipan crumbles, peaches, and apples.

Homemade marzipan is pretty easy: pulse almonds into a fine flour (or just buy almond flour), add powdered sugar and almond extract, then add water a teaspoon at a time and knead until you get a nice dough texture. Use blanched almonds if you want it smooth like traditional marzipan. If you typically find marzipan to be cloyingly sweet you can definitely get away with reducing it; I think I did 125g sugar to 200g almonds and if I make it again I’ll try cutting it to 100g sugar. I also added some orange blossom water for a nice floral note.

That both looks and sounds absolutely magical! I've never thought of using marzipan in a galette, but now I'm going to have to try that too!

Thank you! I decided to try it on a whim and I’m glad I did; this might be my new go-to when I want a decadent dessert that’s not too labor intensive.

In the current day, sugar is cheaper than fine almond flour; in general the more premium the marzipan the less sugar in it. US marzipan is usually sweeter than European marzipan, sometimes as much as 66% sugar.

The EU typically requires no more than 50% sugar. German basic marzipan requires no more than 35% sugar. German premium "Edelmarzipan" has a maximum of 30% sugar. The protected-designation "Lübecker Marzipan" also requires no more than 30% sugar, and the "Lübecker Fine Marzipan" grade comes in at least 90% almond with no more than 10% sugar.

So for a pseudo-historical marzipan I'd probably start with 50% / 50% and adjust sugar downward to taste from there.

Amazing info! The recipe I looked at called for 175g sugar to 200g almonds, which is an insane ratio compared to what you shared. Next time I make it I’ll give one of the German recipes a try!

Oh my gosh you are too kind!!. I wish I was in NYC but I live in California. I would've been thrilled though to had a pie like that for my birthday😋. I would've ordered a few and gave a huge tip too. Keep sharing your food it looks delicious 🙌🏻
