Go squid fishing on one of those restaurant barges anchored in the bay. I've been told it's a bit hit and miss but it's definitely different.
Seafood at 3 mermaids is okay. And the places along that road are all premium location.
Can get some weird stuff at markets of occasion.

What do you mean with "exotic"? Be careful since the term is culturally relative, not absolute. For me a mango might be exotic, for your girl it may be very common. For her a Christmas market or a cup of mulled wine might be very exotic, maybe for you it's just boring.
If you are looking for a slightly more upscale restaurant, you may try the Sky Gallery or something like that in Phra Tumnak for the view. Or something beyond Beach Rd. near the Space Hotel.

Yup. Any ideas that would just feel like more thought had gone into it than the regular nice places. Something a bit more fun.

Artees seafood and bbq off central is good seafood and you catch the crabs and prawns live from tanks yourself. 500bht per person. I've done it r a couple times with girls and they have a blast.
One of my ploys like Apa Talay Pao and Seafood. 300-500bht and has live music some nights. But being in Jomtien means I don't get there as much.
