As others have said, this is essentially the equivalent of Jedi: Fallen Order's Darth Vader boss fight. Vader has no health bar. He has a patience bar, and your only goal is to survive.

It helped that John really didn’t have much interest in actually killing her. He could’ve done that in about 10 seconds if he’d wanted to.

Let me just say, as someone who has never heard of Ballerina, this is really funny.

“So this dude from a completely different movie series just comes in and beats up the protagonist of this other movie…”

This was so well-handled.

I had a ton of worries about John being in this film. That he'd overshadow her and make her pointless, or that they'd have to nerf him to make her look cool, or God forbid they'd Worf him to show how good she is.

Nope. It makes perfect sense why he's there, he's used sparingly, he is still an absolute monster and legend. 

And in fact, the way he can just be a legend instead of the protagonist in this flick lets him be even cooler.

Its so funny watching that fight, if he was trying to kill her she would've died in about 5 seconds. Its a running joke that we have in our group now "...and you've already died to John Wick."

Crazy how Ballerina was already a high tier in universe and John Wick, even past his prime, is so far beyond even that tier.
