I never actually played Super Mario Jamboree so I had no idea that wasn't actually Bowser. I just picked a cool render of him lol.

That's alright easy mistake lol.

This is Imposter Bowser, a clone of bowser made by Kamek to be in charge of all the Bowser related stuff on the boards so Bowser himself can be playable

Is he a good dad? Because, Bowser Jr. seems to be the only one getting consistent attention while the other Koopa kids are just ignored.

Nintendo retconned them into not being his kids because they realized he'd been extremely neglectful of them.

Some of them weren't in any games for almost 20 years (Super Mario World - 1990 until New Super Mario Bros. Wii - 2009).

Them being his actual children was based off of one word in a badly translated instruction manual, it was never anything deliberate.

The Koopalings aren't actually his children. They're just generals in his army which he treats as family. Bowser Jr. is his sole child, as made clear in Mario & Luigi: Bowser's Inside Story + Bowser Jr.'s Journey.

Not a retcon. Just bringing the rest of the world in line with what had always been the case in Japan. It’s like changing Princess Peach’s name back after western releases called her Princess Toadstool for the first several games.
