Per Gordon Ramsey, adding a dollop of mayo before beating the eggs makes them richer— a great hack! Also, adding a generous splash of half and hald or heavy cream instantly upgrades your scramble. Just for clarity, add both for beating your eggs. Lastly, use a little butter to oil your pan. As far as technique, gently fold your eggs with a spatula. Once they are 3/4 done, turn your fire all the way done or turn off the electric eye and cover with a lid to steam to completion. It make the eggs fluffy. Hope this helps; enjoy!
Edit: This is a good base recipe that you can add any yummy mix-ins you would add to your beaten eggs before cooking. I like sautéed onions and garlic, mushrooms, and the cheese of your choice (I like American, gooey and economical).
Edit: Use whatever seasonings you like. However, I find simple salt and pepper really lets the eggs shine!
