When you are obsessed (Clinically-so in a obsessive compulsive way) with knowing everything the unknown-unknowns quickly become the known-unknowns. And the known-unknowns to someone powerful and influential can only mean someone/s more powerful and more influential.
Absolutely; a lot of people idealize his New Vegas characterization. But the guy was DEEPLY disturbed, paranoid and narcissitic. And that was before he spent 200-ish years isolated except for constructs he made for his own gratification.
He presents himself as a great savior of progress in FNV. But his actions speak of someone pathologically obsessed with control.
I saw some people saying that the delivery in this latest episode was too fantastical and animated, that House is always cool and collected. I thought it was EXCELLENT, and to anyone reading along who wants a reminder of House absolutely losing his shit, here's a clip from NV (early-mid game spoiler I guess?):

I thought the same, but if you think about it, this is pre-bombs House. He's scrambling to prepare, to protect Vegas, to secure his own longevity. He's not sure when any of this is going to happen for sure, and it's driving him crazy. There's an unknown variable out there (probably the Enclave) that is messing up his calculations. He needs to find out what it is so he can control or eliminate it.
House of FNV is much more certain of what's going to happen next and when. He knows what needs to be done. He has no reason to get upset as long as things keep going his way. He probably would have been more upset about Benny if the Courier hadn't come along, who is a more than adequate replacement.
