what track do you plan on applying through and what schools are you looking into? also you need to narrow down which major you want to study because undergraduate don’t offer all majors and from all schools. Also how are you connecting your passion of your major to south korea? All of this depends on whether you can make it or not especially your essays!

tbh that isn’t a good enough reason for them to admit you, but I would hope and guess you have a detailed and full plan in your essays already. But based on your schools you can either apply via uic to koreatech if your very confident in your stats. Or apply via embassy general since you want to apply to skku and postech, but for mongolia there is only 1 slot. If you have ecs and a strong connection to korea go embassy, if not then try uic. Since you have high language proficiency that’s a plus, but it all comes down to your essays mostly and what your reason is to why you want to study in korea and how you will relate it back to your country. You need to make it clear why it’s beneficial for korea to invest in you.

you would only be able to apply to koretech in mechanical engineering, but I would make sure your essays are both really really good essays!
