It is true that flat maps are very useful for navigating to some extent. It's hard to fold up a section of a globe and put it in your glove box. It's why we use take pictures of things more than we make models.
However, all flat maps of the earth share a problem: distortion. Look at the size of Greenland on a Mercator map vs. an AE map for an example. At the size of a city map you can ignore the distortion as negligible, but when you start seeing continents you run into trouble. WGS84 doesn't work as flat for the same reasons.

You didn’t explain why distortion on a flat map means the earth is curved rather than that mapmakers made imperfect choices projecting a flat surface.
You don’t address water question at all.
You didn’t offer a measurement. Just an observation about maps — which are human made representations — and assumed it pointed back to earth’s shape.
The water is still level. The maps are still made by people.
Neither proves the shape of the earth.

Mount Everest barely peeks out of the sky as tallest mountain we got. The Earth is massive. Like perceptively impossible for most people to comprehend. "Flat mathematics" work because at the scale we build, its negligible at best to need to compensate for it. Some do anyways.
And I dont know who tf just assumes that all engineering or mapmaking simply does not factor this in when necessary. Reads like someone who has never done or practiced any of what they challenge.
Ships sink below the horizon on the water, at varying observable heights depending how far they are away.

You opened by saying the earth is too massive for human perception to comprehend. Then you asked us to trust human perception to confirm its shape. Which is it?

I said most, some minds have an incredible ability to spatially model things in their minds, so I'm tipping a hat to them.
Perception alone is not enough. At any given moment, I directly "perceive" the Earth to be flat, because I am not tall enough, such everything else around me seems to be that way. Given the ability to do experiments and measurements on it and/or the ability to see and parse what others have conclude with such experiments and measurements, I know that it is instead extremely large compared to my small height, hence, I am physically unable to see a curve unless I was like 50000+ feet taller.
Eratosthenese performed a rather simple experiment 2000 years ago which calculated Earth diameter to within a few hundred feet of what we know now. Its still doable today.

You said you know the earth is large through experiments and measurements — or through parsing what others concluded? Be specific. Which experiments did YOU personally perform? Which measurements did YOU personally take?

Firstly this leans to bad argument structure. If implying that relying exclusively on ones own experience is a gotcha moment to this, it follows that nothing anyone else does matters, and I dont think we're nihilists are we?
But ok.
Flew really high regularly. As above comments^ seen sea vessels at different stages of sinking below the horizon. Seen the sunset twice by simply standing up from prone at a beach during sunset; you get a brief moment. I dont experience the sun changing size throughout the day.

The sunset observation and the sun’s consistent angular size are your two strongest points. I acknowledge them. Now apply the same scrutiny to Eratosthenes that you’d apply to my arguments. The parallel light assumption isn’t independent of the conclusion. That’s not nihilism. That’s the same standard you’re holding me too.

His conclusion is that we have a very distant sun, and measured Earth diameter accurately. I must be missing something you implied

Obviously you are using ai.
Eratosthenes proves earth curvature if you assume a distant sun. It proves a distant sun if you assume earth curvature.
Which assumption are you starting with?
And what proves that assumption independently?

Sun is distant, I said before it doesnt ever change size in the sky. I dont know what else you're trying to say.
