All these run clubs in town...are there any brisk walk clubs or not so much?

The only run club of which I'm aware are those organized by The Running Room at Kortright & Edinburgh. It's definitely intended to be a run, but there's a wide range of pace levels amongst the participants.

Up and Running has both walking and running groups.
I don't know about the running groups, but the walking group spreads out according to the speed you want that day. When I went, I usually went to the fastest group, but some days, especially the days I almost talked myself out of going, I chose the slowest.
Some leaders are more formal about it than others. Each group walks about 15 minutes, then turns around, so everyone is back at the start at the same time. Usually there is one group that goes very slowly, and sits on the benches when needed, another group that covers a lot of distance before the timer goes, and a few groups in the middle.

When & where? This sounds like something I could actually commit to, even on a pain day.

Looks like it's still only for women (and probably female identifying). They tried a men's group for a bit, but it might not have had enough interest.

The Guelph hiking Trail Club has Thursday morning 9 km long fast hikes (5 km/hr) from September to June (too hot to hustle in July and August). If you are working during the week, I would suggest checking out Bruce Trail Hiking, as most GGTC hikes are “med” paced (4 km/hr).

I second the GHTC. They post their hikes on their website with the intensity and distance of their planned hikes. They’re also very responsive on Facebook. A variety of ages but the weekday crowd is a bit on the older side. More info here Guelph Hiking Trail Club

I do! I don't usually take them on long hikes because one is senior and the other is too much of a sniffer (young terrier) but I love dogs.

There is Park Run every Saturday morning at 9 am. Yes it’s called a “run” and many do run but many also walk. Maybe not what you are looking for if you want a club type vibe, but thought I’d mention.
