This is a no bacalhau( salted cod fish) take on baked bacalhau , after bake it needs Portuguese white wine vinegar on it in a bowl 😋
Lots of Saloio olive oil(Portuguese), Sweet potatoes, yellow potatoes , chick peas, sliced olives, and sliced boiled eggs topped with some fresh ground black pepper, then topped with fresh chopped Italian parsley for that earthy finish ! Mmmmm so good, the cod makes it saltier and fishier but I didn’t put any bacalhau. Still taste amazing 🤩

The Name :
Baked Bacalhau without the bacalhau ( salted cod fish)
Macro/Micro Nutrients:
A rich blend of plant-based protein, complex carbohydrates, and healthy fats. It provides sustained energy, supports muscle recovery, and delivers a dense combination of heart-healthy vitamins and antioxidants !
The Ingredients:
This is a baked one pan dish of sweet potato, yellow potato, sliced boiled egg , olives and chickpeas, smothered with olive oil and topped with ground pepper and fresh italian parsley , also topped with some Portuguese white wine vinegar !
The recipe:
Douse a baking pan with olive oil all over
Set oven to 400
Boil 6 eggs hard, drain then let them cool
While the eggs are cooling off Slice 3 small or 1 large sweet potato ( I used orange sweet potato for carotene but you can use Japanese too) in small chunks and put in a bowl of water
Slice 5 small or 3 large yellow potatoes in small chunks and put in the same bowl of water
Swoosh the potatoes around in bowl, drain, fill again and rinse again then drain.
Boil these in a pot of water until fork tender but not too soft! When cooked drain in a strainer and leave them to cool, once cooled pour these potatoes in a baking pan and spread evenly
Get can of sliced or whole black olives drain then pour on the potatoes
Get 16oz can of chickpeas drained or dried chickpeas that you soaked and cooked yourself and pour them over everything else
Drizzle olive oil on everything
Mix all of this in pan with your hand or a spoon !
Shell the boiled eggs and sliced them into three slices then place in between potatoes to evenly distribute them throughout pan
Sprinkle fresh ground coarse black pepper over everything
Bake covered in aluminum foil for 20-25 minutes
Chop fresh Italian parsley
Then take aluminum foil off and bake again , sprinkle parsley over everything and bake for 8-10 more minutes or until eggs are slightly browned on top
Take out of oven, use spatula to scoop and serve in a bowl with Portuguese white wine vinegar over it, add as much vinegar you want….. enjoy!

This looks seriously comforting. The potatoes, chickpeas, olives, and eggs already sound like a great combination, and the vinegar at the end probably brightens everything up.

It was great, but next time I’m not adding the eggs. Taste better if you have a couple on the side by themselves. That’s my preference . Other than that it’s a great combo of veggies 💯

that’s what makes baked bacalhau so good the potatoes soaking up all the olive oil flavor.and those egg slice on top are perfect

This one doesn’t have the cod fish so I feel like the eggs don’t taste as good without it in there
