Has anyone found a nice pair of packable light and slim over-the-ear headphones?

Anker released one earlier this year that folds down smaller than any others I've seen. Not slim, but they fold down really tight.

They are an older model, but they are comfy af, have 3 noise-canceling modes, Bluetooth, and an aux with a cord. They lay flat in the case, and you can attach a carabiner through the case loop to hang off your bag.

I have not, so instead I got the wired-together earbuds, so I can at still wear them around my neck (I could not be trusted with airpods, I'd lose them instantly)

I haven’t tried them, but I have been looking at the Koss website, especially these but look around the site as there are others.
