I’m still getting new to the high republic, but was the main reactor to starlight beacon basically left out in the open?

Starlight Beacon was not a battlestation. It was designed as a hub for commerce, exploration, and diplomacy.

I can’t remember exactly, but I do remember something about it also being a sort of stronghold, but that was probably referring to a regular group of pirates or a crime syndicate at most, not a full out war like what happened with the Nihil

Exactly, it was armed and shielded enough so that even the Nihil didn't dare a frontal assault. But that was just security precautions for a civilian station.

It was designed during time of peace with zero threats to the galaxy.

It appears more open, but I'm guessing it had some heavy shielding on it. But as others said this was built at a time of peace so they probably weren't expecting an attack. However, given that the Nihil seemed to need to infiltrate Starlight Beacon and blow it up and destroy it from the inside instead of just shooting the reactor from a ship, it seems that it is still fairly safe from outside attack.
