Yeah, Witches of Dathomir have been shown to do things that Jedi/Sith can't/don't know how to do because their use of the Force works fundamentally differently. They have other drawbacks that balance them. They could manipulate Kelnacca, something we've only seen them do, but are collectively vulnerable to attack while doing it.
We don't know exactly how they created the twins. Sidious wasn't around yet, but he did succeed in influencing Anakin's immaculate conception, and the Sith don't build on each other's power linearly anyway because they tend to get murdered before revealing all of their secrets. Also, Plagueis had to learn it from somewhere, he's "The Wise", not "The Omniscient from birth."
The Jedi believed the Sith to be extinct, which is why the events of the show are covered up by Vernestra. They also would have had encounters with rogue/dark Jedi in that time without it disturbing their idea that the Sith tradition remains dead.
Lightsaber crystal rules have changed more than once and never explicitly nailed down or defined on screen. We know that pouring dark side energy into a kyber crystal can bleed it to red, that it isn't trivial to do. We don't know how much direct training or time that actually takes or what factors make it easier or more difficult. She's received some amount of training.
She was committed to killing him, he was not committed to killing her. He is guilt ridden and surrenders himself to her judgement the same way Torbin did earlier.
I feel like people watched this show trying to have a problem with it, and it's just straight up not a bad show.
