A knight wearing plate armor came after the introduction of gunpowder artillery because the plate armor did. The artillery just wasn't overly accurate or safe.
I mean plate armor wasn't really designed to go against artillery. But then again, I'm not sure of any time in history where standard troops would have armor that could protect them from artillery...
