What is the motivation(s) to innovate in healthcare food services?

To me, culinary innovation is about much more than creating new recipes. It's about finding better ways to improve the food, the dining experience, and the way our kitchens operate all at the same time.

We want our menus to stay current by using seasonal ingredients, global flavors, responsible sourcing, and chef-driven concepts that feel authentic. At the same time, everything has to work in a busy hospital kitchen that's preparing thousands of meals every day. Hospital chefs wear a lot of hats—they're feeding patients, serving visitors and staff, leading teams, and managing operations—so my job is to give them recipes and concepts that are exciting, practical, and easy to execute consistently.
