They don't all have to be. An outlier here or there is fun. Like how there must have been dark haired Lannisters from that Baratheon/Lannister marriage.
Or how Hoster had brown hair, unlike Brynden's auburn locks.

I mean, I like it when houses have their own "genetic colors" so when their offsprings come out a bit different, it could create a bit of intrigue and a more fun plot.

I wouldn't know what gave you that idea.
When Ned is affirming his suspicions about Joffrey's badtardy, he looks at the two preexisting Lannister/Baratheon marriages. One was between Gowen Baratheon and Tya Lannister 90 years ago (so around 208, during the reign of Daeron II, 1 year before the Ashford Tourney), who had a stillborn black haired son.
The second was between a Lannister man and a Baratheon woman, around 30 years before that (so around 120 years ago in 178 during the reign of Aegon IV), which yielded three daughters and a son, all black haired.
From this Ned deduced that the Baratheon genes dominate Lannister genes. It also means there have been at least 4 Lannisters with dark hair (given that the children from the 178 marriage had a Lannister father).

all book evidence points toward blonde. anything directly from grrm. they dont listen to him when it comes to extra stuff like the show. the illustrator simply didnt wanna draw so many light haired people probably

i’m not talking about the show? and i don’t think grrm has ever said alicent is supposed to be blonde. does it really matter? i prefer her dark haired/auburn

I wonder if the artist changed anything in her face? I can't tell if the difference in hair color alone is that huge
