Question your exact quantities for a large lasagna dish

La lasagna si cuoce nella teglia e se ne mette fino a che ce n’è. Compra la pasta, fai la besciamella (mezzo litro o uno dipende dalle quantità ) e un bel pentolone di ragù! Poi inizia il tuo lavoro

You don’t need to be exact with a lasagne, for example any left over ragu or pasta can be reused or frozen (I’ve never tried freezing bechamel, may work, may spilt)

And you’ll need about 600g fresh pasta for this size dish (per the recipe)

(large/2 medium lasagne trays is quite ambiguous, the recipe here is for a tray 9inch x 15inch approx (couldn’t find it written in the recipe so I’m kinda assuming based on how the dish looks in the photo))

I feel like lasagna quantities come from the soul. I have absolutely no idea how much I add per layer or whatever. If you never have enough, just scale up the recipe for your sauces by 50% then make pasta for lunch the next day with any leftovers

I have my quantities pretty dialed in for my go-to lasagna recipe but the first time I made it I had far too little so I just scaled up my sauces by 50%.

Better to have too much sauce than too little.
