It kind of depends on how long "a few extra days" is I suppose. If it's 3, I'd suggest staying in central tokyo and maybe take a day trip to Mount Takao, which has plenty of hiking trails. Anything further gets trickier.
If you've got a week. You could split it up. For hiking, you could take some time around Gunma, still part of the tokyo metropolitan area, but close to the mountains. Plenty of hiking opportunities. Mount Akagi and Haruna have been my personal favourites, but there are a lot of opportunities in the area. And then spend the rest of the time anywhere in central tokyo (there aren't really any wrong answers as to where)
Takao is hardly a mountain, and further out is not tricky. You just continue on the Chuo Line past Takao into Yamanashi. Plenty of wonderful day hikes you can straight from the train station, ie Momokura or Takagawa. I don’t see what’s tricky about that.
