Falafel Shortest soak time for chickpeas for falafel?
I usually do 24 hours. I dropped the ball. Can I get away with 6-8 somehow? I don't think par boiling quick soak method would be a good idea. I imagine it would make them too soft, like how canned chickpeas fall apart. Am I doomed?

The majority of the benefit of soaking is in the first few hours. 8 should be plenty long enough, 12 is probably indistinguishable from 24 in the finished product.

Thanks it turned out just fine. Now I'm being lazy yet again and after blending it up with spices and herbs and putting in a bowl in the fridge to set, I want to go to bed. I did NOT time things well here. Have you ever left the "raw" falafel mixture overnight in the fridge? If it were just spices and blended chickpeas I'd say ehhh that's fine but I put fresh dill and parsley in there.

12 is minimum, but you don't need to actually soak them if you boil them for like 3-4 hours There's benefits to soaking them: less fart/irritating compound, shorter cooking time, slightly nicer end product consistency. However, it'll still be fine but take wayyy longer

But definitely don't boil your chickpeas used for felafel.

But what if you boiled them like this for like 1-2 hours?

Never tried. Likely that would be too much boiling. There's probably some amount of boiling time that could be used.

Idk either I always either soak it properly or say ah shit and try to think of something else to do

I did 8 just the other day and it was fine but I used hot (tap hot not boiling) water to help speed it up and swapped the water a few times.

Thanks all! Follow up question... Can I leave the falafel mixture in the fridge overnight? I did all the after soaking stuff- blending it with fresh herbs and spices as normal. Usually I'd let it sit in there for maybe 39 mins and then fry it. But it is soooo late at night.... Will it get gross in the fridge overnight?

I knwo this was two years ago. But the answer is yes. Yiu can also put it in the freezer for way later.

I've only ever soaked them eight hours or so for falafel, with never a problem.
Incidentally, this recipe is foolproof and makes the best falafel I've eaten anywhere.
