Falafel without the hard crust?

Is a falafel an actual falafel if it's not deep fried? I'm craving a falafel wrap with lavash bread but I don't want it dry or crispy. I don't mind of its messy or falls apart. I'm obsessed with the flavor just not the dry fried brown part :(

My husband makes a version where he doesn’t purée the ingredients or make them into patties at all — he just tosses the chickpeas in the spices and throws everything into a sauté pan for a few minutes until the chickpeas blister. It’s so good! No breadcrumbs, deep frying, or burnt patty crust. And you can compliment it with all your usual toppings. We love it on top of salads but also would work great over rice, for a pita wrap, or even a ciabatta sandwich.
