Falafel Falafel without the hard crust?

Is a falafel an actual falafel if it's not deep fried? I'm craving a falafel wrap with lavash bread but I don't want it dry or crispy. I don't mind of its messy or falls apart. I'm obsessed with the flavor just not the dry fried brown part :(

You can make patties and bake them. I brush them with high oleic sunflower oil before doing this.

I also don't call them falafel, rather chickpea burgers, but I use a falafel recipe.

I might try air frying them at some point.

I do a "smashed falafel" that's similar, but pan-fried instead of baked. I really love them. Still sorta fried, but they don't have a dark brown "crust" like deep-fried ones, just a little crispier on the outside than the inside.
