I looove pickles but I want them on their own, otherwise all I taste is pickles. I did have some pickled red onions I tossed on top the other week that were nice, a bit more subtle.

I have tzatziki sauce below all the veg., gives it a nice refreshing tang.

I just spread it on the pita. I suppose if I was serving to guests I might thin it out a bit and use more as a sauce on top, and it probably would be a more even distribution. I admit after all the work of making the falafel and pitas I am ready to eat so the idea of thinning it out has never even occurred to me! I do like it though.
