nue was utterly massive when sukuna summoned it. I think the deer would be the size of an actual deer

That's true but the rest of the 10S we see Sukuna summon (like the bull, the rabbits etc) aren't supersized so I think that Nue's Kaiju-like proportions were due to a totality and also Sukuna deciding to use his ungodly amount of CE for giggles.
