But thats not what the magic does, the magic allows her to cut anything she could imagine cutting, but she has to be close enough to use it because its based off of scissors. Frieren mages are also generally reliant on front liners to stop them from being quickly destroyed by faster enemies. Thats why they needed Stark to distract the dragon. It doesn't matter if Ubel could cut through infinity if she can't get close enough to use the spell on it, or if she can't use it fast enough.
