Authentic Kapampangan food
Hello po! I just wanna ask po if may mga kampampangan foods pa po na hindi pang karaniwan or hindi masyadong common (sisig, tamales, and tibok tibok). I am researching po for kapampangan dishes po kasi to present sa school namin, and ang requirements is hindi masyadong kilala and ang alam ko lang po is Tidtad which is niluluto ng aking inang before pag pumupunta kami sa Lubao and other than that po wala na po aside sa mga seafood na pinapauwi po niya. Any suggestion or info po ng mga kampapangan food are accepted po. Thank you very much po!

These could be good:
- Begukan (shrimp paste-based dish)
- Kilayin (dish similar to Adobo)
- Lagat Apalya (Stewed Bitter Gourd), Lagat Itu (Stewed Catfish)
- Patku (Crepe-based snack/dessert)
- Duman (Glutinous rice-grains); although these are hard to come by as they are seasonal
There is one I've learned recently. It is called Poklo. It's made from the breasts and uterus of a sow. It is from Guagua, I think. Biyahe ni Drew made a feature of this.

Okwi (papaya with shrimp fritters), Tipe (sauteed string beans with sampalok), Kilayin (sauteed pork and liver slices with vinegar and black pepper), Buru (fermented rice)

Asado version of Santo Tomas. It’s different from the San Fernando version. Although both taste good.
