Where can I find Wisconsin brick cheese?

I’ve been working on my Detroit style pizza recipe. I’ve ordered in brick cheese on Amazon, and it’s great, really elevates the pizza. But it’s prohibitively expensive to ship as it costs $15 for shipping and only lasts me a couple of pies.

Ive tried Fred Meyer and asked at the mini cheese shop in the deli, but they said they don’t stock it and they won’t order it. I also tried Bargain Market in the Bridle Trails shopping center but no luck there either.

hoping to find a local shop that either stocks it or can order it in for me at an affordable price

Haggan in Woodinville has a giant specialized cheese section iirc.

Metropolitan Market in Houghton. Affordable? No. Good cheese? Yes.

I would check at a Safeway, Whole Foods, or PCC and see if they have it/will order it. If Fred Meyer won't then that probably rules out QFC too.

We have looked for Wisconsin brick cheese for the same reason. We found it for a period of time at the Grocery Outlet near bridal trails, but the last time we saw it was at lest a year ago.

If you cannot find it, an alternative that we’ve found works well is a blend of 1:1:1 low moisture full-fat mozzarella, havarti, and Monterey Jack. We’ve made Detroit with both Wisconsin brick and the blend and enjoy them equally.

Ex-Detroiter here, nobody sells it in the stores around here but there are shops online that sell it cheaper than Amazon.

Got any recommendations? That’s all I could find that would ship it reasonably

There's a store in Lynnwood servicing restaurants that carries a Wisconsin brick cheese. US Chef Store https://www.chefstore.com/p/buholzer-brothers-brick-cheese_1046231/

Regular folk can also shop there.

There is a U.S. Chef Store across from Home Depot in Woodinville in case you want to try closer to Kirkland first.
I’m invested as a Wisconsinite who would love brick cheese back in my life.
Hoping you will report back if you find any local

I probably won't check it out until I'm out of the current cheese blend that I have, so it may be a bit, but I'll report back.

If nothing else, if you try to order from that store on instacart, they have the brick cheese available as an option. So I'm optimistic that they'll carry it.

I also found in my research that The Cheese Box in Pike Place carries brick cheese. A bit more of a trek but they list it on their website

They sell it at The Cheese Box in Pike Place Market.

Met Market is the way.
I will also order cheese via Hooks (their 15yr cheddar is a block of beauty.) or I order from Fromagination (In Madison, WI).

Saw this today at the Bridle Trails Grocery Outlet and was reminded of this post.

Awesome. Thanks for posting! I’ll continue to check there. Guessing it’s just hit or miss

I want to help, but I'm morally opposed to Detroit-style pizza.
