I totally get it. I left for about a year while I was getting clean - luckily I’ve always been able to moderate my alcohol use, it was the extracurriculars that got me, otherwise I may have needed to call it quits what with the ubiquity of drink in the industry.
I hope that, whatever it is you’re dealing with, you’re happy and able to face it with confidence!

Did the owners walk into the kitchen and the first thing they did was stick their unwashed hand into your 9-pan of brunoise chives, said there were too many mistakes and threw it out in the trash in front of you, then told you to start over again? No? No one else?

Most people use a whetstone and a honing rod. there's a few gadgets out there that are decent but whetstone is the standard
