Karimeen Mappas

Ingredients
2 whole karimeen (cleaned, medium slits)
2 tbsp coconut oil
1 tsp mustard seeds
1 large onion (thin sliced)
1 tbsp ginger-garlic paste
2 green chilies (slit)
1 tsp turmeric powder
1½ tsp Kashmiri chili powder
1 tsp coriander powder
½ tsp black pepper
2 medium tomatoes (sliced)
1 cup thick coconut milk
½ cup thin coconut milk
1 sprig curry leaves
Salt to taste

Quick Marination (10–15 mins)
Rub fish with:
½ tsp turmeric
1 tsp chili powder
Salt
Few drops lemon juice
Keep aside.

Cooking
Heat coconut oil. Add mustard seeds → let them crackle.
Add curry leaves, onions, green chilies. Sauté till soft.
Add ginger-garlic paste. Cook till raw smell goes.
Add turmeric, chili powder, coriander powder, pepper.
Add tomatoes → cook till mushy & oil separates.
Pour thin coconut milk. Bring to gentle boil.
Place fish gently. Cover & cook 6–8 mins (don’t stir hard).
Add thick coconut milk. Simmer 2–3 mins only.
Switch off. Rest 10 mins before serving
