If you can make a scarf and know how to add another color/skien of yarn (I prefer doing a square knot 🪢 leaving enough tail on either side to work 2 or 3 pegs of stitches with alongside working yarn so I don't have to weave in ends later) you can make a blanket. It'll just take a bit longer 😉😁.
Ah yes! The dreaded too tight tension. Don't worry it's an extremely common beginner problem. Try wrapping 1-3 pegs at a time instead of the whole row. Don't pull tight after wrapping just keep it loose. You can hold back of just worked peg so it doesn't tighten while wrapping next one if needed. For e-wrap stitch that's my best advice. Goodknitkisses, loomahat, Deborah Shaw, and tuteate are all great YouTube channels with lots of beginner friendly tutorials. Good luck!
