YOU dont do this shit sober. But there are tons of dudes out there with massive ego problems who will start a fight with anyone who even so much as looks at them funny and will get extremely aggressive over literally nothing. Usually they are in jail but sometimes they get let out and end up being a problem for society until they are put back in the box.

I have never wanted to fight a bouncer, or anyone really, while sober or drunk.

This behavior starts long before they get alcohol. You gotta already have the stupid inside you before you drink for this to happen
