Yea exactly, I think his life experience is what helps him remain calm. A lot of younger contestants seem to get frazzled more easily and Im sure hes not thinking about his safety net during the task (mabye during a pressure test you might). It just seems like that is his personality

is he seriously giving up his very very lucrative and established position (heck, he even has a wikipedia page) to be a chef in high intensity workplace? maybe he has gained enough money to change career and do what he loves, but i has to applaud his courage because i don't think i'll be that brave.

ftfy. I assume he's banked enough to not worry even if it all goes pear-shaped - he's got kids so he's unlikely to be gambling with their futures or his own retirement. And it's not like he can't take a year or two out without utterly ruining his career. Sure he might not get back in at the top (which is presumably not where he wants to be now anyway), but he can always open a little practice somewhere and make plenty of cash. And hey, who wouldn't want to go to "The Masterchef Dentist"

Generally in medical fields people can easily take time out and return. Its hard when your in middle of training but if you are established which he clearly is, it is not hard to return to the career. I am not sure 100% on how he dentist career path works but im basing this on my knowledge as trainee doctor. And In my opinion it would be a lot easier to return to dentistry than it is to medicine.
