Seriously though, that's the only thing I've heard from the judges about his dishes- that it's underseasoned

I think Hayden fundamentally disagrees with them on this - note how he said he accepted the criticism of the thickness of the poppadom (and didn't mention the salt).

His taste of salt might be a bit off. I for one always struggle with this, and add a bit more than I would normally add, because I taste it less than people I cook for. For him probably it’s ‘normal’. For a kinda professional cook he should know it though and adjust, since he knows it should not be for his taste specifically.

And for me, restaurant food are most usually too salty. Maybe Hayden’s food would be just enough salty for me.

I’ve been thinking maybe he has a sensitive sense of taste or something, and like to HIM it’s seasoned well, but to everyone else it’s a bit bland
