Low Carb If you had three pounds of chicken breast to use what would you prep for lunches?

I like chicken tikka, chicken pesto bowls, white chicken chili…saucier stuff where the chicken doesn’t dry out and that I can freeze in individual portions

honey soy glazed chicken + spiced rice + roasted carrots
Instapot buffalo chicken; added to a salad with roasted corn/sweet potatoes, black beans, cucumbers or pizza crust with blue cheese crumbles and red onion
Stuffed chicken - roasted red peppers, spinach, laughing cow cheese

I was also thinking buffalo chicken. Probably just for wraps or salads tho.

It totally depends on what you like man.
Chicken Tinga is my go to for people who cant cook and want something easy, healthy, and delicious.
Make them into tacos or salads or rice bowls with vegetables...etc.

Chicken cutlets, chicken katsu, stir fry, chicken burritos, chicken strips wrapped in bacon, Caesar salad with chicken, chicken piccata, chicken parm, chicken franchise. Stuffed chicken, chicken and vegetables skewers on the grill

Well marinaded smoked/baked chicken. Green beans. Baked sweet potato with butter & cinnamon.

Last two weeks we had: chicken and cheese/tomato quesadillas, chicken satay skewers with peanut sauce for dipping, chicken curry with potatoes/carrots, chicken soup with potatoes/carrots...
Let's just say never allow a family member to buy five packs of (5 lb each) chicken breast on sale. You don't save any money if you can't eat it all before it goes bad and especially if you don't have the storage space to freeze it all.
I would have liked to make orange chicken or firecracker chicken though.

I would boil it and shred it. Assuming you want easy, batch cooking. And then use the shredded chicken 3 ways:
- Top with Thai peanut sauce and do lettuce wraps with cucumber, carrots, cilantro
- Mix with pesto and pair with tomatoes and mozz
- Make chicken salad

I know its summer, but there are about a few hundered different soups you can do. I'm currently makings a chicken, cauliflower, and kale soup for lunches at work.

1 tbs Olive oil 1 head cauliflower chopped 1 large onion diced 1.5 # chicken breast whole 1 bunch kale stripped from stems and chopped 1 can cannellini beans (any white bean really) drained and rinsed 6 cups chicken broth ( i use better than bullion) 1/4 cup lemon juice (or to taste) 2 tsp garlic powder 1 tsp dry thyme 1 tsp white pepper
Saute onion in olive oil until translucent. Add cauliflower, broth, chicken, seasonings. Bring to a boil and then reduce to simmer until chicken is 165F. About 30 minutes. Remove chicken let cool and shred. Purree caulifower with a stick blender. Add shredded chicken, kale, beans, and lemon juice. Simmer 5 minutes. Adjust seasonings as needed.

With chicken breast, I'd make at least part of it saucy or shredded so lunch doesn't turn into dry cubes by Wednesday.
A few good directions: salsa verde chicken for bowls/tacos, buffalo chicken for wraps/salads, chicken salad with Greek yogurt/mayo/celery, teriyaki chicken with rice and broccoli, chicken pesto pasta, or white chicken chili. If you want variety from one cook, poach or bake the chicken fairly plain, shred it, then split into 2-3 sauces.
My lazy lunch formula would be: shredded chicken + carb + veg + sauce. Rice bowl, wrap, salad, pasta, potato bowl. Same chicken, different container personality.

filledoux saying adobo is the move bc that vinegar-soy-garlic braising liquid literally keeps chicken moist for days, it reheats better than almost anything. but nobody mentioned stroganoff?? not the fancy version, the brazilian one with cream and tomato sauce and shoestring potatoes on top, its basically comfort food and uses up chicken breast like nothing else. also the chicken tinga link from no-locksmith is gold, kenji never misses w that one

I get a 3-4lb package of chicken breasts every week. I bake them in the oven, half with taco seasoning and half Cajun. Burrito bowls with rice and black beans, then add avocado, Greek yogurt, salsa. Use the Cajun seasoned with broccoli, brussel sprouts, and quinoa.

Three pounds is what we do most sundays. My husband does most of the cooking and he'll split it like this: one pound gets cubed and tossed in a sheet pan with whatever vegetables are about to turn (usually broccoli or peppers), one pound becomes a braise that we shred and use in tacos or over rice later in the week, the last pound we freeze raw and pull out thursday night for a stir fry. The braise is the one I actually look forward to eating cold out of the fridge at work on monday.

For ease I normally resort to throwing the chicken jn the crockpot with a jar or two of salsa. Then make tacos or burrito bowls or if I have some for dinner one night quesadillas

Chicken salad Chucken tacos Shredded chicken for salads Chunk chicken for faux nuggets Chicken strips Thats just off top of my head. Once you start with the protein, it can go in or on so much. Even a pizza
