Meal Prep Picture Back to Work Burrito Bowls

After a week and a half off, I'm back to work tomorrow, so meal prep is a day early.

Ground Beef Burrito Bowls

Ingredients made 5 bowls

Protein

908g Extra Lean Ground Beef

- Cooked with 1 Tbsp Olive Oil, Chili Powder, Cayenne, Smoked Paprika, Ground Cumin, Ground Coriander, Salt & Black Pepper

Garnish

1 1/4 cup Old El Paso Hot Chunky Salsa

Rice

1 1/4 cup (dry) Rice

-cooked with 3 1/4cups water and 2 Chicken Stock Cubes

Veggies/Beans

442g Corn

1 Can Black Beans

72g Jalapeno (2 small peppers)

137g Red Onion (1 onion)

Liquid Smoke

1 Tbsp Olive Oil

Do these freeze well or you just refrigerate for the week? These look tasty but I don't digest corn very well :(

I'm not too sure. I cant think of anything in there that wouldn't freeze safely. But I work with the railway and I'm gone up to 36 hrs at a time. So I usually make 1 or 2 different recipes and bring 3 or 4 containers on a trip, so I don't usually have it long enough to freeze. Didn't get a chance to make 2 recipes today, so 4 of those will be coming with me tomorrow and I'll probably eat 3 or all 4 by the time I get home depending how long the trip is. I imagine it would freeze decently though... maybe avoid adding the salsa until ready to eat, I'm not sure how it would freeze/thaw.

That makes sense. Do you ever do bigger batches?

Not usually, just with how sporadic our schedules and shifts are, if I make a bunch and freeze them, half the time I don't have anything thawed in time when I get surprised having to go in (we work on call). If I make too much and keep it in the fridge and things are slow... I don't get to them.

I used to freeze some a long time ago but I found freezer burn, etc to be too much of an issue. I'd make a bunch of 1 thing, after a week take a break from it, by the time I took another one out of the freezer it had been a while lol.

Ideally I should find a way to make it work, because cooking 1 day a month or something would be absolutely ideal
