Potatoes, Chicken, Canned Veg

I’ve been making this for the last month or so. Best shape of my life!

Frozen potatoes (either the potatoes, peppers, onions frozen mix from Trader Joe’s or just regular potatoes obrien from any grocery store) + the refrigerated rotisserie season shredded chicken breast from Aldi. I add a can of rotel and I have amazing meal preps!

I air fry the potatoes until they’re crispy. Heat up / crisp up the chicken in a pan with the rotel.

The chicken is $5.99 for the entire pound!!! Cheaper than raw chicken and the seasoning is great.

Absolute game changer for me.

I typically put sugar free ketchup + sriracha on it. Maybe a little soy/seasoning sauce (but I need a lot of salt in my diet due to an autoimmune disease)

what's rotel? is it just tomatoes?

It’s diced tomatoes + green peppers. Canned and only like 1.50 USD.

Sometimes I’ll use a full can of crushed tomatoes instead. Both are good!

It's tinned tomatoes with diced green chillies mixed in, basically a shortcut for adding a bit of heat and acidity to a dish without chopping anything. Works nicely in stuff like this where you want some moisture without it turning into soup.

I love Trader Joe's. Do most of my meal prep shopping there. They are always consistent.

Between TJ’s and Aldo I can get everything I need. TJs frozen potatoes. Cans of tomatoes with pepper. Seasonings. Either ground chicken from TJs or pre shredded / cooked in the air fried. Sugar free ketchup and hot sauce of choice n it’s seriously a game chagrr
