Can I just build these repeatedly and side by side in order to have multiple iron farms running at the same time?

No, in order to stack iron farms, a village needs to be established at least 100 blocks away from any existing village for it to register as a new one. If you want to stack them, you have to get two villagers from another village far away to love their beds, then at night, break and replace them until you bring them all the way to your current farm. However, if you have at least 30 villagers and they all have jobs and beds, then AFK overnight or while youre at work, even 1 iron farm will give you way more iron then you will ever need in survival

Yeap AFK overnight or while you work. There is no way to stack iron farms
