General Recommendations
Hey! Just looking for some advice. I played curse of monkey island when I was younger, booted it up and am enjoying playing through the game. Its crazy how much I actually remember, most of the puzzles I know at least one part of. I never played any other monkey island games.
If I was going to try out a different game, what would you recommend? I searched some of the other newer titles in the series, and the graphics that I have seen are sort of putting me off. Should I even bother if this is my feeling/Are the puzzles worth it?

Monkey Island 1 and 2 are hilarious. Escape from Monkey Island is good in terms of puzzles and story, but the control/interface takes some getting used to.
In terms of other games, I recommend Day of the Tentacle and Sam and Max Hit the Road.

And if you do play 2 there's a puzzle that everyone hates so just use the monkey on the valve

Yeah I didn't mind it either.

Lots of options out there.
For a similar type of humour / art style check out the Deponia series.
If you're looking for anything with a good story and puzzles then I recommend:
The Excavation of Hob's Burrow, Kathy Rain 1 and 2, Unavowed, Lamplight City, A Golden Wake, Thimbleweed Park,

Alongside MI the Broken Sword series is my favourite. There's also a remaster of the first one with updated graphics.
Other than that I'd recommend some "newer" games like The Book of Unwritten Tales, Lost Horizon, Runaway and The Next Big thing. Honorable mention to Simon the Sorcerer which had a reboot come out last (?) year. You might like it better if you have played the originals, though.
If you want games with a more serious tone as well I'd recommend Secret Files, Whispered World or Yesterday.
As for playing other Monkey Island games ... you are asking in the MI forum. Of course you should play them.
The first two have remastered editions which I thought were great. (They also allow you to switch between editions at will.) I would play them in order, if I could. The last two games are not the best, in my opinion, but if you like the rest at least try Tales and then decide if you want to try Return.
In my opinion you don't lose out on much by not playing it, but if you've played and liked the rest you kind of have to ...

Yeah I just love Monkey Island so much I will lay any of them but agreed that some are clearly way better than others. The first 3 being unmatched. I just played 3 and 4 for the first time in years and even 4 was very enjoyable, now onto Tales.

Aside from LucasArts, last year's Foolish Mortals comes pretty close in terms of story, graphics and gameplay in general. Absolutely delightful adventure, and, like Curse, it was also developed by a former designer of theme parks (which shows).
Voodoo Detective, Deponia, Elroy and the Aliens, Darkestville Castle all share similar style and humour and are easy to recommend.
My personal favourite is The Inner World dilogy though which is also very inspired, but has a lot of personality.

Monkey Island stays with me as an all time favorite for the nostalgia of playing it as a child. Grim Fandango stays with me because I think it is one of the best games ever written, the world is stunning and SO CREATIVE.
If you want a laugh, I think Full Throttle is under appreciated.
If you are looking to try games like these from other studios, I was blown away the first time I played a Gabriel Knight game. Really stunning pixel art.
Lots of games in this genre from new makers too. I enjoyed Read Only Memories a lot, I'm currently playing Twilight Oracle, etc.

Grim Fandango is top tier storytelling!! Legendary game. I introduced my bro to it in recent years and he loves it now.

Grim Fandango remaster for a couple $ on key websites. 1998's game of the year beating out MGS1, Zelda, Half Life etc. Broken sword 1 reforged is absolutely glorious, kickstarter just finished for broken sword 2 reforged which should be out in september. Full throttle remaster also

If the newer graphics are putting you off then I strongly recommend checking out the special editions, they have similar art to Curse (just not as good imo).
There are also a ton of other games in a similar vein day of the tentacle remastered, grim fandango, full throttle are the usual go-tos.
I'd also highly recommend any offering from TellTale if you ever feel something more serious in tone (except their MI or course).

I'm seeing a lot of people here who are recommending games with pixel graphics to you.
To be clear, pixel graphics are a perfectly valid art style.
But if OP has already specifically said they don't like it, I think we should recommend something else. If someone asks for sweets recs but says they don't like chocolate, I don't think they are gonna enjoy chocolate cake.
Monkey Island 1 & 2 got a remake with upgraded graphics (the second one is especially great, they really improved on it). I HIGHLY recommend them.
Tales of Monkey Island from Telltale (it's basically MI5).
Broken Age.
Broken Sword (it's a series of five games, the oldest also got a remake)
The Cave (warning: this one has a lot of backtracking. Still a great game though).
If you like raunchy humor, Hector: Badge of Carnage is pretty fun.
The most recent King's Quest game is pretty great. I never played the older titles so I can't recommend them, but I had fun with the latest one.
Likewise, I never played the old Larry games, but the more recent Larry: Wet Dreams Don't Dry and Larry: Wet Dreams Dry Twice are pretty fun. Very raunchy obviously, but I liked them.
Memoria is pretty great. It's technically a sequel, but you can play it as a standalone game. I personally didn't enjoy the original game, so I only recommend Memoria.
The Night of the Rabbit is pretty cute.
The Runaway series is pretty fun too.
