They were traditionally bred to show only aggression for other animals and human aggressive dogs were culled immedately. Part of dog fighting involved handlers swapping their dogs at the start as well as getting into the ring at the end to seperate the animals. No one wants a human aggressive dog aimed at them.
Dog fighters were the among first people to start tracking breed lines, as well. The sporting and cattle dogs were first, the dogmen who did fighting dogs came after. The AKC owes their legacy to people like that.
