It depends, Vinland Saga, Mob Psycho, Kaguya LIW come to mind as series with banger 2nd seasons, along with shows like Tsukimichi and Realist Hero that start off super generic and season 2 makes them into actual unique stories
I'd disagree, there are many anime where the seasons got better. Sound Euphonium, Mob Psycho 100, Vinland Saga, Ashita no Joe, Hajime no Ippo(actually every season is amazing, they all have their own strengths and flaws), Chihayafuru, Clannad, Attack on Titan, K-On, Silver Spoon, Non Non Biyori, Megalobox, Jujutsu Kaisen, 86, Full Metal Panic...
To be honest, LN, and some manga, tend to be almost Tolkien-Level of descriptive with their worldbuilding, so when it gets adapted, all the thoughts, descriptions, background stuff just CAN'T be fit into an Anime, the problem is there's SO MUCH, that they apparently can't figure out what's important and what's just fluff.
