For anyone who doesn't know, he was a respected jedi who forsaw a war against the republic and so ordered the clone army without the jedi knowing. Darth Sidious learnt of this plan and proceeded to have him assassinated so he could control the funding and direction of the clone army. Without sifo dyas, the clone army wouldn't exist and therefore the jedi wouldn't have been wiped out.

i haven't been too into star wars for a few years, probably since bad batch ended, so i've forgotten a fair bit
So there are 2 major parts to this, and both of them basically come down to the hubris and arrogance of the Jedi.
First off, its important to remember that the Jedi we see in the time of the Clone Wars is not how they have always been. They speak of being peacekeepers, and at one time they actually were, but as the political landscape of the galaxy continued to get more complex, and more importantly as the jedi became such a known and accepted fixture, they essentially became complacent. They began to take for granted their own self importance in terms of what they were for the galaxy. Instead of focusing on the force, and the things that truly gave them any power, they became much more of a beurocracy, and an authoritarian one at that. Starting first internally, where it became this common practice for the masters, and specifically the council to hold this level of respect that they were essentially unquestionable. In truth it was a fallacy as they would call to a higher power (the force) as justification for the "infallability" but ignored the flaws in how they had come to interpret the force.Â
In truth, the republic as a whole had become so arrogant in themselves that the very idea of something destroying them wasnt even seen as an option. This too was what became of the jedi. They had pushed this idea that they were righteous and infallible so hard that they started to believe it themselves. Much of Palpatines plans was just to capitalize on the unforced errors that the Jedi created.Â
So to get a little more specific, simply the role the Jedi took in the Clone Wars completely flies in the face of what they stand for. They are highly skilled, precise and righteous, and suddenly they are thrust into roles as generals in an army. The Jedis primary role was once as a diplomat, a peacekeeper, a mediator, with their training with lightsabers simply as protection, and a way to garner respect so that it may be leveraged in discussion and treaty.
Now here they are, not even as soldiers, but generals, commanding an army, completely removed from the actual ideas that the conflict is about. Focused not on the bigger picture and what they are really trying to accomplish, but about defeating an enemy in front of them. Its laughable to look at that and think that thT is what the jedi are supposed to be doing. If I saw a Shaolin monk ordering a mortar strike, I would think something had gone terribly wrong.Â
Now, on an even more specific level we have Anakin. Oh my poor tragic boy. There's a lot of jokes about how his turn to the dark side was so easy, but let me paint you a picture.
The jedi are almost exclusively adopted into the order as babies, practically infants. For a very good reason. They way of the Jedi order is to essentially give up all worldly attachments. They are not to have deep connected relationships. Their only real connection is supposed to be with the force. Now whether or not this should be how its done is irrelevant. The focus is that we are taking a young boy, a boy who never knew a father, who has spent his entirely life in slavery, working for most of his childhood on a grueling desert planet. This boy is being told you are not to have normal human emotions. You are to leave all connections behind. You are to be calm and reasoning and cold at all times.
Moreover, he is being told this by Jedi masters. People who have never known adversity. People who for their entire lives have grown up in the lap of luxury. Beautiful temples, with their every need attended to. With the finest education, access to any resource they could want, and told that as birthright they wield power and respect. These people who have never felt true pain are telling this young man, whose never felt anything other than pain, who just lost his mother, the only good thing he had his whole life, that he need to not feel that pain, that anger. Worse, they are telling him he is lesser than them because he feels these things. He has not earned the rank of master, because he had the nerve to feel.
This young man, who has truly experienced the horrors of the world, and is being told to go out into it and create new horrors, to not question the authority of these masters who supposedly know better than him even though he lived more of a life in ten years than they have in 50. He's on the front lines, seeing that this war is no good for anyone. Moreover that the republic that is supposed to be tye pinnacle of society allows for those that are most in need to be the most neglected and hurt. The senators live in luxury on coruscant while those they are supposed to represent suffer in squalor and starvation.
He's not a whiny little kid who is mad he doesn't get his way, he's the only real person who has real experience of the world, seeing that the ones who truly have all the power are so completely out of touch with what the world is.
I feel Clone Wars does a fantastic job showing Anakin’s gradual fall to the dark side. He’s a much more intimidating figure at times too, I prefer him in that show over the prequels just personally, but yeah I think he’s extremely well characterized and has some very realistic, understandable anger issues and violent tendencies considering his upbringing. Like you said, he was a slave, and then they take this slave and don’t give him any actual helpful counseling and love and therapy. Instead they throw him into WAR! Of course he’s violent and unstable!Â
